Road kill?

What’s for Dinner Tonight? Something from Mindy's cookbook.

Porcupine Meatballs

1t. Parsley
1 cup cooked rice
1 egg (2 if needed)
1 lb ground beef
½ t. onion powder
2 T. Worcestershire Sauce
1 cup Ketchup
1 cup water

Mix all ingredients in a medium bowl except the ketchup and water.
Form mixture into balls (smaller is better)
Brown meatballs in skillet and drain
Combine ketchup and water in a bowl
Pour ketchup mixture over the meatballs
Transfer to a baking dish and cover
Bake @ 350 degrees for 30 minutes

These are so cute to see all the little rice popping out to look like little porcupine's. My kids won't eat them but my hubby and I enjoyed them.
